JOB DESCRIPTION
Requirements:
Bistro Elba currently has Sous Chef position available at Sorrento. The successful applicant must assist the management of the kitchen team to ensure the kitchen is run efficiently and professionally and achieves the highest standard of food quality and presentation at all times. You will help to maximise the revenue generated by the restaurant and consistently improve the utilisation of the kitchen facilities for the benefit of the business.


- Diploma in Commercial cookery qualification or equivalent
- At least 2 years- experience
- Skilled & experienced Chef who can consistently replicate our recipes
- Good communication skills
- Ability to inspire and train staff
Responsibilities:
Staff Management
1. Help to induct and kitchen staff in consultation with Head Chef and owners.
2. Supervision, development and training of junior Kitchen staff.
3. Maintain a high level of staff morale.
4. Ensure high level of personal hygiene of kitchen staff.
5. Set tasks and monitor educational progress of Apprentices (in liaison with teaching staff and business owners).

 
Preparation and Cooking of Food
1. Help to ensure consistency of presentation, quantity (portion control) and quality of food served.
2. All relevant staff must know how each dish is presented, identify and assist staff that do not know.
3. Sous chef must be able to demonstrate and explain each dish to all staff and any outside parties whom the business request to be shown.
4. All sub quality food items to be returned to suppliers and to be clearly marked as returned on invoices.
Menu Planning
1. Help to ensure menus are changed seasonally as directed by the owners and specials are run daily when in charge of the kitchen for a shift.
2. Assist in the costing of all A La Carte, Function Menus items.
3. Observe market trends, the availability and cost of produce, inform owners of problems with supply
4. Recipes are filed correctly.
5. Ensure that the Restaurant Manager has full knowledge of the ingredients and techniques use in each dish when in charge of a shift.

 
Cleaning and Maintenance
1. Help to ensure Kitchen and Food storage areas are kept in a clean and hygienic state.
2. Help to ensure equipment is maintained in a safe, working condition.
3. Help to ensure the proper storage of Food items.
4. Help to ensure staff are aware and comply with Food Safety Standards and HACCP.
5. Help to ensure that all Occupational Health & Safety issues are identified, addressed and rectified in a timely manner


Administration
1. Help to maintain Food Costs within the range of 23 - 25%.
2. Help to coordinate purchasing of food, kitchen supplies and cleaning products.
3. Ensure professional relationships are maintained with all suppliers.
4. Ensure timely delivery and inspect the quality of kitchen supplies. All deliveries must be checked upon arrival.
5. Help to monitor wage costs to ensure an improvement on current figures and ensure accurate recording of time sheets for all staff.
6. Participate in performance appraisals of the kitchen team.
7. Purchasing to be clearly recorded so that all kitchen staff can see what is arriving each day.
8. Attend each kitchen management meeting to gather all relevant information about costs and sales relating to your department including last week sales, month to date sales and costs & YTD figures.
9. Conduct performance appraisals on other staff at regular intervals with owners.
10. Monitor wastage to ensure that IT is minimised.

Salary Range: $70,000 - 80,000 + Superannuation
